I had a whole bunch of spinach from last week. I tried to finish it by making palak paneer but still had some leftover.

Hence decide to make hara-bhara kababs which are made using potatoes, spinach and green peas. They came out really yummm...I did add some chat masala so that they become little tangy. I also did not deep fry them, instead just shallow fried them. Below shallow frying I coated them with Sooji (rava) so that they become crisp.

Palmiers (Elephant Ears)

Recently we bought these Palmiers (elephant ears) from costco and Aditya and me loved them. We used to eat them daily with tea/milk. One of my friend, Sheetal recently had them and she immediately tried to make it. I got the recipe from her and tried it. It came out really well. I was really happy to see the results :)

Corn Pithale

Recently I had been to my friend's (Kalgi) place for dinner. She has made this delicious dish with corn. We had no concrete name, so I decided to call it as corn pithale. 

Recipe: Boil corn and take out the kernels. Grind them in the mixer with some milk. Then simply give tadka with oil, jeera, green chilli, ginger. Add the corn mixture, add some lemon, salt and its done. Very easy, quick and simple recipe.
Note: The corn I used were already sweet, but if you want, you can add some sugar to it too.

Spicy Corn bread

This was in my long pending list, finally did it today. One of my friend suggested me to add spicy stuff to the plain batter.
I used a regular corn bread mix and added jalapeños and some red chili powder and baked it. It was yummm...:) We both enjoyed it a lot!

Eggless Chocolate Cake

Yesterday I made an eggless chocolate cake.
I used this recipe 
Actually taste wise the cake was yummy but it was not too fluffy. I am surely going to retry and try to make egg less fluffy cakes :)

Spaghetti with Pesto

Actually this is one of my friends recipe but I loved it and tried it myself multiple times. I used the pesto sauce from Safeway/Costco for this. Basically you stir fry all the veggies you like (I used carrots, bell peppers, onions, lots of garlic, ginger), added salt, chili flakes, Italian seasoning. Boiled the spaghetti separately. Added it to the veggies with the pesto. It is really yumm...do try it!
